

Layered Mousse Parfait

Layers of rich, whipped, chocolatey, deliciousness!
INGREDIENTS
DARK CHOCOLATE MOUSSE
- 6 oz Lily's Dark Chocolate Baking Chips or bar
- 1 tbsp coconut oil
- 3 egg whites
- 14 oz heavy cream
MILK CHOCOLATE MOUSSE
- 6 oz Lily's Milk Chocolate Style Baking Chips
- 1 tbsp coconut oil
- 3 egg whites
- 14 oz heavy cream
WHIPPED FRUIT CREAM
- 14 oz heavy cream
- 4 oz fresh raspberries
- 4 oz fresh strawberries
- 1/4 C water
WHIPPED CREAM
- 14 oz heavy cream
- Chopped fresh strawberries and raspberries (for topping)
INSTRUCTIONS
FOR MOUSSE
Melt chocolate and coconut oil over low heat in a double boiler until melted. Set aside.
With a hand mixer, beat egg whites until medium soft peaks form.
With a hand mixer, whip cream until medium hard peaks form.
Whisk egg whites into melted chocolate.
Once combined, fold whipped cream into chocolate mixture 1/3 at a time until combined. Set aside.
FOR WHIPPED FRUIT CREAM
In a medium sauce pan, add fresh fruit.
Add 1/4 C water and cook over med heat until bubbling. With a hand blender, blend until smooth.
With a hand mixer, whip cream into medium hard peaks.
Fold fruit mixture into whipped cream. Set aside.
FOR WHIPPED CREAM
With a hand mixer, whip cream into medium hard peaks. Set aside.
Layer dark chocolate mousse into bottom of parfait glass.
Top with milk chocolate mousse.
Top with whipped fruit cream.
Top with whipped cream.
Finally, top with fresh chopped berries.
