Holiday Ricotta Loaf

A holiday inspired sweet treat featuring no sugar added chocolate chips and sweet gummy candy.
  • 1 1/2 cups of flour
  • 1/2 teaspoon of salt
  • 2 sticks of unsalted butter softened
  • 1 tablespoon of liquid stevia
  • 3 eggs
  • 15 ounces of whole milk ricotta cheese
  • 2 teaspoons of vanilla extract
  • 1/2 cup of stevia sweetened chocolate chips
  • 1/4 cup of green and red sugar free gummy candies chopped
Pre-heat oven to 350 degrees. Grease a non-stick loaf pan.
In a medium size mixing bowl whisk together: salt and flour. In an electric mixer on medium high or with a hand mixer cream the butter with stevia. 
Slowly add the eggs and vanilla extract. When these ingredients are blended add the ricotta cheese. Mix until just incorporated.
Lower the mixer to low medium and slowly add the flour. Mix until flour is blended.
Add chocolate chips and gummy candy and quickly mix them in on low or hand mix them in with a spoon.
Pour mixture into loaf pan and bake for 60 to 70 minutes or until the top becomes golden brown and the loaf begins to separate from the sides. A tooth pick should come out clean from the middle.
Let cool for 5 minutes before using a knife to loosen the sides. Flip the loaf on to a cooling rack and let sit until it is room temperature.
