Cookies n Crème Brownies

Packed with fudgy goodness and decadent chocolate flavor!
- ¾ cup Lily’s Semi-Sweet Style Chocolate Baking chips
- 6 Tablespoons unsalted butter, cut into 1-inch pieces
- 3 Tablespoons unsweetened cocoa powder
- ¾ cup stevia baking sugar
- 3 eggs
- 1 teaspoon vanilla extract
- 1 cup all purpose flour
- ¼ teaspoon salt
- 1 Lily’s Cookies & Crème White Chocolate Style Bar, chopped
Preheat oven to 350 F. Line an 8x8 baking pan with parchment paper and set aside.
Place Lily’s semisweet chocolate baking chips and butter in a microwave-safe bowl. Microwave on 50% power level for 90 seconds or until butter is melted. Stir until chocolate is melted. Set aside and allow mixture to cool slightly.
In a large bowl using an electric mixer, beat stevia baking sugar, eggs and vanilla on medium-high speed until pale in color, about 3 minutes. Add chocolate mixture and mix just until combined. Stir in flour and salt, then Lily’s Cookies & Crème White Chocolate Style Bar (avoid over mixing).
Transfer mixture to prepared pan and press down evenly with a rubber spatula. Bake for 20 to 25 minutes. Brownies are done when the edges are set, but the center is still soft. If you want, sprinkle a few more bits of cookies & crème pieces on top to melt after taking the brownies out of the oven. Allow them to cool in the pan before slicing and serving.
