Cookie Dough Stuffed Dates


Dates stuffed with naturally sweetened, raw, edible, gluten-free, grain-free, vegan, chocolate chip cookie dough! 

 

INGREDIENTS

  • Whole dates
  • 1 batch chocolate chip cookie dough (below)
  • 9 oz Lily's Dark Chocolate Baking Chips
  • Coarse sea salt for garnishing

 

COOKIE DOUGH

  • 1 1/2 cups almond flour 
  • 1/4 cup peanut butter 
  • 1 tsp vanilla extract 
  • 1/4 tsp salt 
  • 1/4 cup maple/agave syrup 
  • 1/4 cup Lily's Dark Chocolate Baking Chips

 

 

INSTRUCTIONS

Slice open and remove the pits from the dates (if you didn't purchase pitted dates). 

In a food processor, blend together all cookie dough ingredients except the chocolate chips until a dough forms. 

Transfer the dough to a medium bowl and fold in the chocolate chips. 

Generously stuff each date with cookie dough and set aside on a plate. 

Line plate/baking sheet with parchment paper. 

Melt 1 cup dark chocolate chips over low heat with some coconut oil. 

Dip the ends of each date into the melted chocolate and place on the parchment lined plate/sheet. 

Garnish each date with coarse sea salt. 

Place in fridge to set for about 10 minutes and then transfer to a covered dish and keep in the fridge until ready to serve.
