Coconut Caramel Chip Ice Cream Sandwiches

The perfect refreshing dessert!
- 2 1/4 cups all purpose flour
- 2 tsp cornstarch
- 1 tsp baking soda
- 1/2 tsp salt
- 3/4 cup unsalted butter, melted
- 3/4 cup coconut sugar
- 1/2 sup stevia baking sugar
- 1 egg + 1 egg yolk
- 2 tsp vanilla
- 1 cup Lily's Chocolate Salted Caramel Flavor Baking Chips
- 1 cup unsweetened shredded coconut
- 1 pint ice cream (coconut or caramel flavors suggested)
Preheat oven to 350F. Line a baking sheet with parchment paper.
Whisk together dry ingredients - flour, cornstarch, baking soda, and salt. Set aside.
Beat together butter and sugar with an electric mixer on medium speed until light and creamy, about 3 minutes. Add egg, egg yolk, and vanilla. Beat until incorporated. With mixer on low, slowly add dry ingredients to wet ingredients. Mix until just combined. Stir in chocolate chips and shredded coconut by hand.
Scoop a heaping tablespoon of dough and roll it into a ball. Place on prepared baking sheet and press down slightly. Repeat with remaining dough and bake at 350F for 10-12 minutes. Transfer cookies to a cooling rack to cool, then place them in the freezer until hard (this will make it easier to press the cookies into a sandwich).
Place a scoop of ice cream on the bottom of one cookie. Place the bottom of another cookie on the ice cream and gently press down. Roll in more Lily's chocolate chips and shredded coconut, and serve!
