Chocolate Peppermint Cookies

Get in the holiday spirit and make these delicious, refined sugar-free chocolate peppermint cookies!
- 2 cups all purpose flour
- 1 cup cocoa powder
- 1 tsp baking soda
- 1 tsp salt
- 1 cup unsalted butter room temperature
- 1 1/2 cups coconut sugar
- 1 tsp pure vanilla extract
- 2 eggs
- 8 oz Lily's Sweets White Chocolate Style Peppermint Bar
- Crushed sugar free candy canes
In a mixing bowl, mix the flour, cocoa powder, baking soda, and salt. Set aside.
Using a mixer, beat the butter and coconut sugar on high for 2 minutes. Add in vanilla and eggs and beat on high for 1 minute.
Add in dry ingredients. Mix on low. Chill for 40 minutes.
Preheat oven to 350F. Line 2 cookie sheets with parchment paper. Scoop cookies using 1oz cookie scoop.
Bake for 10-14 minutes. Cool cookies completely.
Melt the white chocolate in the microwave in 15 second intervals. Dip the cookies in the chocolate. Top with crushed candy canes.
