Cookies n Crème Cheesecake Bites

These no-bake Cookies n Crème Cheesecake bites are so easy to make! The hardest part? Waiting for them to set in the freezer!
- 15 pitted dates
- 1/4 cup almond flour
- 1/4 cup pecans
- 8oz almond cream cheese
- 13.5 oz full fat coconut milk
- 1 tbsp maple syrup
- 1 Lily's Sweets White Chocolate Style Bar
- 1 Lily's Sweets White Chocolate Style Cookies n Crème Bar
In a mixer, combine almond cream cheese, full fat coconut milk, and maple syrup. Beat on high speed for 2-3 minutes.
In a double boiler or microwave, melt Lily's White Chocolate Style Bar and Lily's White Chocolate Style Cookies n Crème Bar with coconut oil. Set aside to cool.
In a food processor, combine pitted dates, almond flour, and pecans until a crust forms. About 2-3 minutes.
Then, press crust into a loaf pan that is lined with parchment paper.
In your mixer, add in melted chocolate and mix until well incorporated.
Pour cream cheese batter over crust and spread evenly.
Place cheesecake in the freezer for 2-3 hours to set. Cut into squares and enjoy!
